Wines & Provisions from the Pla de Mallorca


History

When we took over our finca in 2017 we discovered some very old, overgrown vines, some even climbing around wild olive trees. Initially, we hoped to revive them, but years of neglect made it impossible. Now, young olive and almond trees thrive there.

We were determined to bring winemaking back to our land, especially due to our location within the renowned Binissalem AOC. After extensive preparations, we planted 1.2 hectares of vines in the spring of 2021, choosing the indigenous Mantonegro and noble Merlot varieties.


The Vineyard


Can Cavall Blau is located where the "Raiguer" region meets the flat centre of the island, "Es Plà" (The Plains). Our vines flourish in the typical Mallorcan "Call Vermell" soil: rich in limestone, clay and minerals, it’s perfect for viticulture.

Despite its stony surface, this soil helps retain moisture, crucial for our organic farming methods, reducing reliance on irrigation and minimising water usage.

The Wines


Our exclusive wines are crafted with love, adhering to the highest quality standards, and produced in very limited quantities.

Today we produce two distinct wine lines: the natural wine "Es Gat Anarquista" and the traditionally produced "Blanc de Negre".

ES GAT ANARQUISTA

  • 100% organic Merlot from our own vineyard

  • Selected Merlot grapes are harvested by hand in 15kg containers and then traditionally crushed by foot.

    After standing for a day, the mash is gently pressed and transferred to a stainless steel fermentation tank. Here the sugar is fermented into alcohol without the addition of sulphur or cultured yeasts, using only the yeasts naturally growing on the grape skins. This natural fermentation process is a slow one and takes about six weeks.

    The wine is then separated from the yeast and matured for 5 months in stainless steel tanks before being bottled by hand, unfiltered and without the use of pumps.

  • Appearance:
    Deep red colour with violet reflections, clean and bright.

    Olfactory:
    Intense aroma of red fruits such as strawberries and cherries, with some liquorice and a slight herbal note.

    Taste:
    Dry on the palate, very fresh with a good amount of fruit and correct acidity. On the palate, aromas of strawberry, cherry and plum, some liquorice, fresh herbs and light mineral notes. Long finish with red fruit flavours and buttery notes.

    A versatile, fresh wine that can be enjoyed as an aperitif or with fish, white meat or vegetarian dishes.

    Alcohol: 11%

    10-12°

BLANC DE NEGRE

  • 100% organic Merlot from our own vineyard

  • The Merlot grapes are harvested by hand in 15kg boxes and transported quickly and gently from the vineyard to the winery, where they are immediately pressed at low pressure.

    The fermentation of the resulting must, which is only slightly coloured, takes place in a stainless steel container at a controlled temperature of 16° C for approximately 3 weeks.

    After a further 6 months of maturing, also in stainless steel container, the Blanc de Negre is bottled in elegant Bordeaux bottles and is ready to drink.

  • Appearance:

    Light salmon-coloured white wine with a slight pink hue, very clean and bright.

    Nose:

    Medium intensity aroma of fresh citrus fruits such as lime with subtle notes of green banana and floral notes of acacia.

    Flavour:

    Dry and fresh on the palate, with pleasant fruit and good acidity. Citrus aromas of green lime and grapefruit with some white fruits such as apple. Clear floral notes of orange and jasmine. Medium length finish with a slight salty touch and presence of mineral aromas.

    A perfect young wine for the summer to accompany tapas, salads and light lunches or dinners.

Provisions

We produce seasonal, and very limited quantities of preserves, oils, vinegars and other larder goods and condiments from the trees, shrubs and bushes on our farm. These are available to purchase directly from us, from a number of stockists across Mallorca, and in Germany and other European countries from Der Mallorquiner.

Wonderfully fruity-aromatic vinegar made from our fully ripe pomegranates. Give your antipasti and salad dressings that certain Mediterranean something.

Mermelada de Níspero

Nisperos from our garden are first baked in the oven before they are further processed into this jam rounded off with a touch of cinnamon.

Made using an old variety of tangerines, known for their intense flavor despite having little juice and many seeds.
